Galette des rois, François Adamski’s trick

Do you know how to make your « galette des rois » shine?

After making your galette, let it rest for a few moments.
Brown your galette once or twice with egg yolk and put it in the oven.

After cooking, wait a few minutes and then apply a syrup (100g of sugar / 100g of water) with a brush to obtain a uniform shine and an even more crunchy puff pastry!
