The crepes, François Adamski’s trick
To delight your guests with delicious crepes, my tip is to include brown butter in the preparation of the dough.
To make a brown butter, bake the butter in a saucepan over high heat until it turn into a light brown colour. Leave to cool.
Pour the flour, salt and sugar into a bowl.
Break the whole eggs in the center and mix gently incorporating the brown butter not too hot.
Finally, add the warm milk, mix again and let stand for about 2 hours.
Your dough is ready to be pan-cooked!
