Valentine’s Day, the recipe by Rudy Faliex

To impress your sweetheart, I offer you a simple, fresh and inexpensive dessert:
a creamy citrus fruit dessert!

Ingredients (for 2 persons) :
- 30g of palets Bretons
- 10g of butter
- 20cl milk
- 2 eggs
- 20g of flour
- 30g of sugar
- 1 lime
- 1 orange
- 1 grapefruit

First prepare the creamy base.
Gently melt the butter and roughly crush the Breton palets and then mix to obtain a shortbread.
Before the shortbread cools, line the bottom of a ramekin and leave to set in the fridge.

Then make a pastry cream for 2 persons (between 80 and 100g per person).
Mix the egg yolks with the sugar until the mixture whitens and the sugar crystals are dissolved. Add the flour and mix gently so as not to form lumps.
Pour the warm milk into the mixture and bring to the boil for 2-3 minutes. Stir in 20g of lime juice (remember to keep the skin on to make zests) and keep in a cool place.

Pour the lemon pastry cream over the cold shortbread and leave to set in the fridge.

Once the pastry cream is cold, add three orange and three grapefruit segments per person.
Finish with the finely chopped lime zest.

(You can replace the lemon in the pastry cream with another flavour: rose water, orange blossom, etc.).
