Christmas turkey: François Adamski’s trick

For a tasty and tender turkey, I suggest you poach it before roasting it.
This operation can be done the day before.

To do this, place your turkey in a large pot, cover with water at height, add two onions, two carrots, a leek, a bouquet garni and two tablespoons of coarse salt.
Bring to a boil and cook for 45 minutes over low heat.
Remove the turkey and, after draining, let it rest.

You can now stuff your turkey and roast it in the oven in the traditional way, with oil and butter, basting it constantly for 2 to 3 hours, depending on the size of the turkey.
