Plating in Gastronomy: The Studio Culinaire servair’s Perspective

What makes a successful plating? How does it come to life, at the intersection of inspiration, technique, and the chef’s personality?

For this fifth edition of the Servair Culinary Studio Notes, we spoke with the Studio’s chefs and experts to decode today’s key principles of plating in gastronomy.

Plating is a signature marker. It adapts to the dish and the cuisine, but above all to each chef’s individual style: through composition, volumes, colours, and gestures, an intention, a philosophy… and a personality are revealed. Plating is not merely about aesthetics either: a carefully presented dish can increase the perception of taste by around 18% (Michel et al., 2014, Flavour).

Through their different perspectives, several fundamental dimensions emerge:

Minimalism and “Breathing Space”
More pared-back compositions, with deliberate use of negative space and a clear focal point. Fewer elements, but greater visual intent.

Precision and Cleanliness
More structured, “clean & neat” plating, with carefully measured alignments and placements: a true “jewellery” effect.

The Graphic Language of Sauces
Sauces are becoming visual signs: lines, dots, swipes, drizzles… gestures that guide the eye and structure the composition.

As François Adamski, Servair Corporate Chef and member of the Culinary Studio, points out:

Today, plating is becoming more refined. The ‘Instagrammable’ aesthetic is driving a focus on beauty, colour, and lightness. But for me, beauty only has meaning if it serves the taste.
